  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Optional, fold in if desired.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan to prevent sticking.
  2. In a large mixing bowl, combine the grated zucchini, sugar, vegetable oil, and vanilla extract. Stir until well blended.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
Mixing and Baking
  1. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix. If using chocolate chips, fold them in now.
  2. Pour the batter into the prepared baking pan and spread it evenly.
  3. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the brownies to cool in the pan before slicing into squares.
