Preparation
- Preheat your oven to 375°F (190°C).
- Prepare the peaches by peeling, pitting, and slicing them into wedges.
- In a large bowl, toss the peaches with sugar, lemon juice, and a pinch of salt. Allow the mixture to sit while you prepare the crust.
Making the Batter
- In another bowl, whisk together the flour, baking powder, remaining sugar, and a pinch of salt.
- Blend in the melted butter and milk until just combined. The batter should be thick but pourable.
Assembly and Baking
- Pour half of the batter into a greased baking dish, then evenly distribute the peach mixture on top.
- Spoon the remaining batter over the peaches, being gentle to avoid disturbing the filling too much.
- Bake for 40-45 minutes, until the topping is golden brown and a toothpick comes out clean.
Notes
For elegant presentation, serve warm in individual ramekins with a scoop of vanilla ice cream. Pairs well with sweet tea or lemonade. Can be made ahead of time by preparing the filling and topping separately.
