Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Prepare the peaches by peeling, pitting, and slicing them into wedges.
  3. In a large bowl, toss the peaches with sugar, lemon juice, and a pinch of salt. Allow the mixture to sit while you prepare the crust.
Making the Batter
  1. In another bowl, whisk together the flour, baking powder, remaining sugar, and a pinch of salt.
  2. Blend in the melted butter and milk until just combined. The batter should be thick but pourable.
Assembly and Baking
  1. Pour half of the batter into a greased baking dish, then evenly distribute the peach mixture on top.
  2. Spoon the remaining batter over the peaches, being gentle to avoid disturbing the filling too much.
  3. Bake for 40-45 minutes, until the topping is golden brown and a toothpick comes out clean.

Notes

For elegant presentation, serve warm in individual ramekins with a scoop of vanilla ice cream. Pairs well with sweet tea or lemonade. Can be made ahead of time by preparing the filling and topping separately.
