  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • Extra chocolate chips and marshmallows for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the eggs and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  5. Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows gently.
Baking
  1. Spread the mixture in a greased 9x13 inch baking dish and top with extra chocolate chips and marshmallows.
  2. Bake for 25-30 minutes, or until golden brown.
  3. Let cool in the pan before slicing into squares.

Notes

Serve warm with a scoop of vanilla ice cream or pair with hot chocolate or milk. For a gluten-free version, swap out all-purpose flour for a gluten-free blend.
