Lemon Vinaigrette
  • 1/4 cup Lemon juice
  • 1/4 cup Olive oil

Method
 

Preparation
  1. Rinse the tricolor quinoa under cold water before cooking it according to package instructions until fluffy.
  2. In a large bowl, massage the kale leaves gently until they become tender and vibrant in color.
Assembly
  1. Add the cooked quinoa, chickpeas, chopped crunchy veggies, sunflower seeds, and crumbled feta cheese to the bowl.
