Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, fully incorporating each before adding the next. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually blend this mixture into the creamed mixture until just combined.
  5. Gently fold in the chocolate chips with a spatula, distributing them evenly throughout the dough.
  6. In another bowl, mix the softened cream cheese and powdered sugar until you achieve a smooth, creamy texture.
Assembly
  1. To assemble, scoop about a tablespoon of cookie dough, flatten it slightly, and place about a teaspoon of the cheesecake mixture in the center. Carefully fold the dough over to seal it completely.
  2. Place the stuffed cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
