Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.

- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually blend this mixture into the creamed mixture until just combined.
- Gently fold in the chocolate chips with a spatula, distributing them evenly throughout the dough.
- In another bowl, mix the softened cream cheese and powdered sugar until you achieve a smooth, creamy texture.
Assembly
- To assemble, scoop about a tablespoon of cookie dough, flatten it slightly, and place about a teaspoon of the cheesecake mixture in the center. Carefully fold the dough over to seal it completely.
- Place the stuffed cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until golden brown on the edges.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
