Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened cream cheese and butter until smooth.
- Add the brown sugar, granulated sugar, vanilla extract, and egg. Mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the caramel sauce and chocolate chips if using.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
For special occasions, pair cookies with a scoop of vanilla ice cream. Store in an airtight container for up to a week at room temperature or two weeks in the freezer.
