Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a medium bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until fully combined. Press this mixture firmly into the bottom of the prepared pan.
Making the Filling
- In a large bowl, beat softened cream cheese, 3/4 cup sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- Fold in the chopped apples and cinnamon until evenly distributed.
Baking
- Pour the cream cheese mixture over the crust in the pan.
- Drizzle caramel sauce on top and use a knife to gently swirl it into the cheesecake mixture.
- Bake for 30-35 minutes, or until the center is set and the edges are lightly browned.
- Allow to cool completely at room temperature, then refrigerate for at least 4 hours before cutting into bars.
- Serve with extra caramel sauce if desired.
Notes
For a rich crust, use finely crushed graham crackers. For a creamy filling, ensure cream cheese is at room temperature. Serve slightly warm with whipped cream or ice cream.
