Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of the baking dish.
- In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well.
- Fold in the diced apples and cinnamon, then pour the mixture over the crust.
- Drizzle caramel sauce over the top, swirling it into the cheesecake mixture.
Baking
- Bake for 30-35 minutes, or until the center is set but still jiggly. Let cool completely before slicing.
Serving
- Cut into squares and drizzle with additional caramel sauce if desired.
Notes
Store leftovers in the fridge for up to a week. To freeze, wrap tightly and store for up to two months.
