Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of the baking dish.
  3. In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well.
  4. Fold in the diced apples and cinnamon, then pour the mixture over the crust.
  5. Drizzle caramel sauce over the top, swirling it into the cheesecake mixture.
Baking
  1. Bake for 30-35 minutes, or until the center is set but still jiggly. Let cool completely before slicing.
Serving
